Garlic Herb Steak with Roasted Veggies π₯©π₯π₯
Ingredients:
β’ 1 ribeye or sirloin steak
β’ 1 tbsp olive oil
β’ 2 cloves garlic (minced)
β’ 1 tsp fresh rosemary or thyme
β’ Salt & black pepper (to taste)
β’ 1 cup baby potatoes (halved)
β’ 1 cup carrots (sliced)
β’ 1 tbsp butter
β’ Chopped parsley for garnish

Instructions:
1. Prep the Veggies:
β’ Toss baby potatoes and carrots in olive oil, salt, pepper, and a bit of rosemary.
β’ Roast at 400Β°F (200Β°C) for 25-30 min until golden and tender.
2. Cook the Steak:
β’ Season steak generously with salt, pepper, garlic, and herbs.
β’ Heat a skillet over high heat with a splash of oil.
β’ Sear steak 3-4 min per side (or to desired doneness).
β’ Add butter in the last minute, spoon over the steak as it melts.
3. Rest & Slice:
β’ Let the steak rest for 5 min, then slice against the grain.
4. Serve:
β’ Plate steak with roasted veggies, drizzle any skillet juices over.
β’ Garnish with chopped parsley and a touch of chili flakes if you like heat!
