Ingredients:
For the Ribeye:
β’ 1 ribeye steak
β’ Salt & black pepper
β’ 1 tbsp olive oil
β’ 1 tbsp butter
β’ Fresh thyme or rosemary
For the Shrimp & Scallops:
β’ 4β6 jumbo shrimp, peeled
β’ 4β6 large scallops
β’ 1 tbsp butter
β’ 2 garlic cloves (minced)
β’ Chopped parsley
β’ Lemon juice
For the Roasted Veggies:
β’ 1 cup diced sweet potatoes & carrots
β’ Olive oil, salt, pepper, paprika
β’ Fresh herbs (optional)
Creamy Dipping Sauce:
β’ 1/4 cup mayo
β’ 1 tbsp sour cream
β’ 1 tsp Dijon mustard
β’ 1 garlic clove (grated)
β’ Black pepper, lemon juice to taste

Instructions:
1. Roast the Veggies: Toss diced veggies with oil, salt, pepper, and roast at 400Β°F (200Β°C) for 25β30 mins until golden.
2. Sear the Ribeye: Season steak, sear in hot pan with oil 3β4 mins per side. Add butter and herbs, baste, then rest.
3. Cook the Shrimp & Scallops: Sear scallops and shrimp in butter + garlic until golden (about 1β2 mins per side). Finish with lemon juice and parsley.
4. Mix the Sauce: Combine all dipping sauce ingredients in a bowl, whisk until smooth.
5. Plate It Up: Serve steak with seafood, roasted veggies, a pool of pan juices, and a side of creamy sauce.
