Ingredients:

For the Ribeye:

 β€’ 1 ribeye steak

 β€’ Salt & black pepper

 β€’ 1 tbsp olive oil

 β€’ 1 tbsp butter

 β€’ Fresh thyme or rosemary

For the Shrimp & Scallops:

 β€’ 4–6 jumbo shrimp, peeled

 β€’ 4–6 large scallops

 β€’ 1 tbsp butter

 β€’ 2 garlic cloves (minced)

 β€’ Chopped parsley

 β€’ Lemon juice

For the Roasted Veggies:

 β€’ 1 cup diced sweet potatoes & carrots

 β€’ Olive oil, salt, pepper, paprika

 β€’ Fresh herbs (optional)

Creamy Dipping Sauce:

 β€’ 1/4 cup mayo

 β€’ 1 tbsp sour cream

 β€’ 1 tsp Dijon mustard

 β€’ 1 garlic clove (grated)

 β€’ Black pepper, lemon juice to taste

Instructions:

 1. Roast the Veggies: Toss diced veggies with oil, salt, pepper, and roast at 400Β°F (200Β°C) for 25–30 mins until golden.

 2. Sear the Ribeye: Season steak, sear in hot pan with oil 3–4 mins per side. Add butter and herbs, baste, then rest.

 3. Cook the Shrimp & Scallops: Sear scallops and shrimp in butter + garlic until golden (about 1–2 mins per side). Finish with lemon juice and parsley.

 4. Mix the Sauce: Combine all dipping sauce ingredients in a bowl, whisk until smooth.

 5. Plate It Up: Serve steak with seafood, roasted veggies, a pool of pan juices, and a side of creamy sauce.
