Ingredients (Serves 2):
β’ 1 large ribeye or sirloin steak
β’ 4 eggs
β’ 1 cup shredded cheddar cheese
β’ 1 tbsp olive oil
β’ 1 tbsp butter
β’ Salt & pepper
β’ Fresh herbs (thyme or parsley)

Instructions:
1. Cook the Steak:
β’ Season steak with salt and pepper.
β’ Heat cast iron skillet with olive oil over high heat.
β’ Sear steak 3β4 minutes per side. Add butter and baste during the last minute.
β’ Let rest for 5 minutes, then slice.
2. Make Crispy Cheese Eggs:
β’ Wipe out excess oil, then sprinkle cheese in a circular layer in the skillet.
β’ Crack eggs on top of the cheese while it melts.
β’ Cook on medium heat until whites are set, edges are crispy, and yolks are still runny.
3. Assemble & Serve:
β’ Add sliced steak beside the cheesy eggs.
β’ Sprinkle with herbs and cracked black pepper.
