Ingredients:

For the Lamb Chops:

 • 4 lamb rib chops

 • Salt & black pepper

 • 1 tbsp olive oil

 • 1 tbsp butter

 • 1 garlic clove, smashed

 • Fresh rosemary or thyme sprig

For the Mashed Potatoes:

 • 3 large potatoes, peeled & cubed

 • 3 tbsp butter

 • ½ cup heavy cream

 • Salt & pepper to taste

 • Optional: pinch of dill

For the Red Wine Sauce:

 • ½ cup red wine

 • ½ cup beef broth

 • 1 tbsp balsamic vinegar

 • 1 tsp brown sugar

 • 1 tbsp butter (to finish)

For the Asparagus:

 • 1 bunch asparagus

 • Drizzle of olive oil

 • Salt & pepper

Instructions:

 1. Mashed Potatoes: Boil potatoes until tender. Mash with butter, cream, salt, and dill. Keep warm.

 2. Asparagus: Blanch or roast with olive oil, salt, and pepper until tender-crisp.

 3. Sear Lamb Chops: Season chops with salt & pepper. Heat oil in skillet. Sear chops 3–4 mins per side with butter, garlic, and herbs. Remove and rest.

 4. Red Wine Sauce: In same skillet, pour in wine, broth, vinegar, and sugar. Simmer until reduced. Swirl in butter at the end.

 5. Assemble: Plate mashed potatoes, top with lamb chops, surround with asparagus, and spoon that glossy sauce all over. Garnish with chives or parsley.
