Ingredients (Serves 2):
For the Steak:
β’ 2 skirt or flank steaks
β’ Salt & black pepper
β’ 1 tbsp soy sauce (optional marinade)
β’ 1 tbsp olive oil
For the Sides:
β’ 2 cups waffle fries or tater tots
β’ 2 cups baby greens (spinach, arugula, etc.)
β’ 1 cup cherry tomatoes, halved
β’ 4 eggs
β’ Green onions, sliced
β’ Salt, pepper, and chili flakes to taste

Instructions:
1. Cook the Fries:
β’ Bake or air-fry waffle fries/tater tots at 400Β°F (200Β°C) until crispy.
β’ Season lightly with salt.
2. Sear the Steak:
β’ Season steaks with salt, pepper, and a splash of soy sauce if desired.
β’ Sear in a hot skillet with olive oil, about 2β3 minutes per side for medium-rare.
β’ Rest for 5 minutes, then slice thinly against the grain.
3. Fry the Eggs:
β’ In the same skillet, crack eggs and cook sunny side up.
β’ Season with salt, pepper, and chili flakes.
4. Assemble the Skillet Bowls:
β’ Layer greens at the bottom of a bowl or skillet.
β’ Add sliced steak, fries/tots, halved tomatoes, and eggs on top.
β’ Garnish with green onions and a sprinkle of seasoning.
